He chose you because he wants you to be his future, not his family. They will always be there for him and you, but spending as much time with you as he can is really crucial right now because it will help build your relationship. Don't feel guilty. It's a fact of life that most people at this age fly the coop and their families have to learn to let go and stop nurturing them. Just imagine though, the little time that he will get to see his family (especially around holidays) will be even better and probably not stressful at all compared to other families who do get very stressed during those times of the year. If you really want to show your gratitude, reach out to his family. Start snail mailing them.
